Cooking
Today for cooking i made enchiladas. Joy made the chicken before hand so it would be ready. We also used pork. I cut the pork into cubes and then put it in the pan with oil and chicken broth. After that we added rice and seasoning. We let that cook and warmed up tortillas. Once it was done cooking we got cheese, sour cream, the meat, green sauce, and red sauce. We started assembling them and put them into a dish. We made 4 red and 8 green. After we were done we put them into the oven. We took them out and served them.

While researching about northern Spain for our upcoming trip i discovered many interesting facts and things I'm looking forward to doing. Firstly in northern Spain there are many activities they're known for such as they're gorgeous beaches for swimming in, bike rides, canoeing and hiking. One of their most famous hiking trails is the camino del norte that starts in irun near the French border and goes over 500 miles to Santiago de compostela. another thing I'm looking forward to is discovering more about their history and culture, they have many unique museums and religious buildings that help us understand what we see today. another interesting thing about northern Spain is there geo parks geologists from all over the world come to experience and learn from their spectacular rugged cliffs Which tell you about what life was like over 60 million years ago. Lastly the cave of altamaira in northern Spain is the first cave found to ever have prehistoric drawing dating back as far as 18,500 years ago.

cooking
This week for cooking we made 3 pumpkin pies. Joy made the dough, then tilden and I rolled it out. Once the pie crusts were all rolled out we pinched it together in the pie dish. We put the pie crust into the fridge and I made the filling for two pies. Tilden made the filling for one pie, he used home grown pumpkin for his. After that we put them in the oven for 1 hour. When we tasted it the pie was still warm so it wasn't as good.
